Persian Burgers

- 500 grams ground beef
- 2 onions
- 2 tablespoons turmeric
- 1 garlic clove
- 2 tablespoons olive oil
- 1 cup mint leaves finely chopped
- 2 tablespoons grapeseed oil
- 1 tablespoon lemon juice
- 1 teaspoon apple cider vinegar
- 4 tablespoons mayonnaise
- 1 cup canola oil (for deep frying crispy onions)
- 2 onions thinly sliced
- ½ cup of all-purpose flour
- 4 tomatoes
- Romaine Lettuce
- Pickled Radishes
- Sesame Bun
- Pulse the onions and garlic in a food processor until broken down completely.
- Add the onion/garlic mixture to a bowl with your ground beef, turmeric, olive oil, salt & pepper to taste.
- Let marinate for at least 30 minutes.
- Grill the koobideh patties for 2-3 minutes on each side using high heat on a grill pan.
- Add finely chopped mint leaves to a hot pan with grapeseed oil.
- Let fry for 1-2 minutes until mint is fragrant.
- Remove from pan and place in a small bowl with apple cider vinegar, lemon juice, mayonnaise, salt & pepper to taste.
- Stir ingredients until fully incorporated and set aside.
- Coat thinly sliced onions with flour.
- Place the canola oil in a saucepan on high heat until bubbling (check with the back of a wooden spoon for right temperature)
- Deep fry the onions in the oil for about 2 minutes until golden brown and crispy then set aside.
- Slice the tomatoes and grill them on high heat for 1-2 minutes each side.
- Toast your bun and begin to assemble your burgers.
- Place the aioli as the first layer, then the burger patty, the tomatoes, radishes, lettuce, crispy fried onions, and finally the top bun.
